Pumpkin and Sage Patties

Easy to do and taste great. Pumpkin season is here so make the most of it! Amaretti are italian biscuits with a distinct bitter sweet flavour, they are made from apricot kernels. DON'T substitute them with almond biscuits. Show more

  1. Bake the pumpkin wrapped in foil for 50 minutes in a 250 degrees C oven, until softened.
  2. Puree the pumpkin, add the crushed amaretti biscuits, parmesan, mustard, flour and eggs. Season with salt and pepper.
  3. Butter a cupcake pan and spoon the mixture into the holes. Top each pattie with a leaf of sage, sprinkle a little more parmesan cheese
  4. Bake in a 250 degrees C ,pre-heated oven for 8 -10 minutes or until golden.
