Pulled Pork Burritos

Easy to make! A great use of leftover pork or chicken. The kids love taking them to school for lunch. Show more

Directions

  1. Saute onions until tender.
  2. Add pork, taco seasoning and water.
  3. Cook over medium heat to thicken sauce.
  4. Add beans, corn and salsa.
  5. Mix and remove from heat.
  6. Assemble mixture in the middle of the tortillas.
  7. Top with cheese and roll into burrito.
  8. Serve immediately or wrap in tin foil and bake at 350 for 10-15 minutes. Can also be microwaved to melt the cheese.
  9. Optional: serve on a bed of shredded lettuce and diced tomatoes, with a side of sour cream, salsa and guacamole.
  10. Note: any cheese can be used, we had Monterey Jack on hand.
