Puffed Potatoes & Sausage

Ingredients
- 1⁄4 cup green onion, with tops sliced
- 2 tablespoons butter
- 3 medium potatoes, peeled and cubed
- 1 cup American cheese, shredded
- 3 egg yolks
- 1⁄3 cup milk
- 1⁄2 teaspoon salt
- 3 stiffly beaten egg whites
- 1 (8 ounce) package brown-and-serve sausage links
Directions
- Cook onion in butter till tender but not brown.
- Cook potatoes in boiling salted water till tender, about 10 minutes; drain and mash (about 2 cups mashed).
- Beat in cooked onion and cheese.
- Beat together egg yolks, milk and salt; blend into potato mixture.
- Fold in beaten egg whites.
- Turn into a 2-qt. casserole.
- Arrange sausage links over potato mixture.
- Bake, uncovered, at 375 till set, about 45 minutes.
