Protein Pancakes

This aren't pretty but they taste better than they look. :P

Ready In: 15 mins

Serves: 2

Ingredients

  • 3  egg whites
  • 14 cup  unsweetened vanilla almond milk
  • 13 cup quick-cooking oatmeal (not instant)
  • 14 teaspoon cinnamon
  • 1  drop  liquid Splenda or 1  teaspoon Splenda sugar substitute
  • 116 teaspoon salt
  •  fresh fruit, your choice (banana, pineapple, blueberries, etc)

Directions

  1. Blend in a food processor.
  2. Pour half of mixture into a hot frying pan sprayed with cooking spray. Cook on 1 side until brown then flip.
  3. Serve with sugar-free syrup. (I love Mrs Buttersworth, you can't tell the difference).
