Protein Pancakes

Ingredients
- 3 egg whites
- 1⁄4 cup unsweetened vanilla almond milk
- 1⁄3 cup quick-cooking oatmeal (not instant)
- 1⁄4 teaspoon cinnamon
- 1 drop liquid Splenda or 1 teaspoon Splenda sugar substitute
- 1⁄16 teaspoon salt
- fresh fruit, your choice (banana, pineapple, blueberries, etc)
Directions
- Blend in a food processor.
- Pour half of mixture into a hot frying pan sprayed with cooking spray. Cook on 1 side until brown then flip.
- Serve with sugar-free syrup. (I love Mrs Buttersworth, you can't tell the difference).
