Protein and Fiber Bars

Ingredients
- 3⁄4 cup roasted almonds
- 1 cup roasted pecan
- 1⁄4 cup pistachios
- 1⁄2 cup oat flour
- 1⁄2 cup unsweetened flaked coconut
- 1⁄2 cup almond butter
- 1⁄2 cup coconut oil
- 1⁄4 cup raw honey
- 2 teaspoons vanilla
- 1⁄2 teaspoon salt
- 1 cup dried dates
- 2 tablespoons flax seed meal
Directions
- 1. Make sure all nuts are toasted. Place in a food processor and process till course.
- Mix together coconut, processed nuts, flax meal and oat flour. *You can make the oat flour by placing 1/2 cup oats in a food processor and process till fine.
- Measure dates out before they are chopped. Cut dates and as you are cutting them, place them in the nut/oat mixture and mix around a bit so they don't all stick together.
- In a separate bowl combine almond butter, and coconut oil. If need be, warm up just a bit till it all comes together smooth. Then add the vanilla extract, salt and honey.
- Pour the wet ingredients over the dry ingredients and mix well.
- Pat into a pie plate or 8x8 pan, making sure to really push down and compact it together.
- Refrigerate for an hour or until hardened.
