Prawn Cocktail Salad

Ingredients
FOR THE SALAD
- 7 ounces cooked large shrimp
- 1 avocado, halved, peeled and sliced
- 7 ounces cherry tomatoes, halved
- 4 scallions, finely sliced
- 1 romaine lettuce, shredded
- 2 tablespoons olive oil
- 1⁄2 lemon, juice
FOR THE DRESSING
- 3 tablespoons mayonnaise
- 2 tablespoons ketchup
- 1⁄2 lemon, juice
Directions
- Ready in 10 minutes Whisk the ingredients for the dressing together. If it's a little thick, add a splash of water.
- Put the shrimp, avocado, tomatoes, scallions and lettuce in a large salad bowl, drizzle with the olive oil and lemon juice, toss gently, then serve with the dressing handed round separately.
