Poulet Pacha

Ingredients
- 1 skinless chicken
- 3 tablespoons oil
- 2 slices bacon, diced
- 1 onion, finely chopped
- 1 red pepper, diced
- 1 green pepper, diced
- 4 tomatoes
- 2 garlic cloves
- 1⁄3 cup chicken stock
- 1 bay leaf
- 1 sprig thyme
- 1 sprig parsley
- 1⁄2 cup cream
- 2 dashes Accent seasoning
- salt
- pepper
Directions
- Brown the chicken in the oil, then remove from skillet and keep warm.
- In the same skillet, fry the bacon, onions, garlic, peppers. Cook until slightly softened.
- Add tomatoes, chicken stock, bay leaf, thyme and Accent.
- Put chicken in this mixture in pieces, cover and cook for 30 minutes.
- Remove the chicken pieces to serving dish. Reduce the sauce slightly and add cream and parsley. Spoon sauce over the chicken and servie. Rice is a good accompaniment.
