Potted Cheddar

Ingredients
- 8 ounces aged cheddar cheese
- 1⁄4 cup butter, softened
- 2 tablespoons sweet sherry
- 1 teaspoon freshly grated parmesan cheese
- 1⁄8 teaspoon grated nutmeg
Directions
- In food processor, shred cheddar. Add butter, sherry, Parmesan, nutmeg. Process until smooth and blended, about 20 seconds.
- Cover and refrigerate for 2 hours, or up to 1 week.
