Potatoes Sauteed With Lemon and Parsley

Ingredients
- 1 lb russet potato, thinly sliced
- 2 1⁄2 tablespoons olive oil
- 1 tablespoon chopped parsley
- 1 tablespoon lemon juice
- 1⁄2 teaspoon lemon zest
- 1⁄4 teaspoon salt
- 1⁄8 teaspoon pepper
Directions
- Cook potatoes in a large saucepan of boiling salted water until barely tender, 6-8 minutes. Drain.
- In a large skillet, heat oil over medium-high heat. Add potatoes and cook until soft and lightly browned, 7-8 minutes.
- Stir in parsley, lemon juice, zest and season with salt and pepper.
