Potatoes Romanoff

A creamy potato dish for garlic lovers. My mom's recipe.

• Yields: 1 casserole

Ingredients

• 4  large  peeled potatoes, water to cover
• 1⁄4 teaspoon salt
• 1 1⁄2 cups large curd cottage cheese
• 1⁄2 cup sour cream
• 2  garlic cloves, minced
• 1  cup  shredded sharp cheddar cheese or 1  cup swiss cheese
• 4  tablespoons  chopped fresh parsley
• 2  green onions, minced

Directions

1. Cook potatoes in water with salt till done.
2. Cut potatoes into ½ inch dices.
3. Toss potatoes with cottage cheese, sour cream, garlic, salt, and green onions.
4. Turn into a buttered 1 ½ quart casserole.
5. Sprinkle with the cheese, bake @ 350 for 35 minutes or until potatoes are heated through and cheese is melted.
6. Sprinkle with reaming parsley, serve.
