Potatoes Pancakes

I got this recipe from my Grandma. It's a great comfort food, good with applesauce or syrup.

Ready In: 40 mins

Serves: 5-7

Ingredients

  • 3  cups potatoes, peeled and shredded
  • 12 cup onion, finely shredded
  • 18 cup flour
  • 3  eggs, beaten
  • 1  teaspoon salt
  • 18 teaspoon pepper
  •  oil

Directions

  1. Dry potatoes with paper towels.
  2. Combine all ingredients except for oil.
  3. Warm oil (enough to cover bottom) in a large skillet.
  4. Pour 1/4 cup of mixture for each pancake into oil, flatten slightly with spatula.
  5. Cook until golden brown on both sides.
