Potatoes Chantilly

This came from my friend emily. it looks so elegant but is easy to make.

Serves: 6-8

Yields: 1 casserole

  1. peel, slice and boil the potatoes.
  2. drain and mash.
  3. whip with a fork and the milk.
  4. add sour cream and cheese and almost all the onions.
  5. spoon mixture into a casserole dish add more cheese, onion and parsley to the top.
  6. bake at 375 for 25 minutes.
  7. add another bit of onions and cheese and bake for another five minutes.
