Potato-Tomato Gratin

  1. Preheat oven to 450 degrees.
  2. Spray a large casserole dish with nonstick spray.
  3. Saute onions in a skillet over medium high heat with olive oil just until soft.
  4. Stir in garlic; cook another minute.
  5. Add the tomatoes and reosemary, cook about 10 minutes.
  6. Layer half the potatoes, season with salt and pepper.
  7. Top tomatoes with tomato mixture and half the cheese.
  8. Repeat layering ending with cheese.
  9. Cover with foil and bake 30 minutes.
  10. Remove foil and bake for 15 more minutes to brown cheese.
  11. Let stand 5 minutes to set cheese before slicing.
