Potato-Tomato Bake

Ingredients
- 2 lbs Simply Potatoes
- 2 large yellow onions
- 1 lb fresh tomato, sliced
- 6 tablespoons olive oil
- 1 cup parmesan cheese
Directions
- Preheat oven to 350 degrees (f).
- brush a large baking dish generously with olive oil.
- arrange a layer of thinly sliced onions in the dish,.
- followed by layers of potatoes and tomatoes (alternating).
- season with salt and pepper to your taste.
- pour on a little of the oil, sprinkle with 1 cup of grated.
- parmesan cheese. pour on a small of water.
- bake for 1 hour or until tender. if top is getting to brown, place a sheet of foil on top of dish.
