Potato Soup

Everyone in my family just loves this soup.

Serves: 6

Ingredients

  • 1  cup  diced celery
  • 12 cup water
  • 6  medium potatoes (or as many as you want)
  • 2  cups water
  • 1  medium onion, chopped
  • 2  teaspoons salt
  • 14 teaspoon pepper (I use less, because it is too peppery)
  • 3  cups milk

Directions

  1. Cook celery in 1/2 cup water, just until tender.
  2. Peel and cube potatoes.
  3. Place in a 4-quart saucepan with 2 cups water or more depending on how many potatoes you used.
  4. Add cooked celery, onion, salt and pepper.
  5. Cook until potatoes are tender.
  6. Mash slightly to eliminate definite cubes.
  7. Add milk.
  8. Cook on low till everything is done (30-35 minutes).
