Potato Scones

Ingredients
- 450 g potatoes
- 115 g cottage cheese (either plain or with onions and peppers or chives)
- 1 egg (size 4)
- salt, black pepper
- 1 tablespoon flour (wholewheat self-raising)
Directions
- Cook the potatoes with their skins on, drain well and then mash. Add all the other ingrediens, and mix well, a blender is ideal. Form into patties and either cook on hot griddle (10 minutes) or in a medium oven for 20-30 minutes. Serve with grilled mushrooms and tomatoes, perhaps a portion of camembert, chicken or ham.
