Potato Salad With Julienne of Ham

Ingredients
- 10 medium potatoes, cooked till tender and cubed
- 1 teaspoon salt
- 1⁄2 teaspoon black pepper, freshly ground
- 1⁄3 cup white wine vinegar
- 1 teaspoon dry mustard
- 3⁄4 cup olive oil
- 1⁄4 cup mayonnaise
- 1⁄2 lb ham, cut into thin julienne strips
- 6 gherkins, well drained and cut into thin julienne strips
- 1⁄4 cup fresh chives, chopped
Directions
- Combine salt, peper, vinegar, mustard and oil. Toss the potatoes, while still warm, in this mixture. Allow to sit for a few hours.
- Add mayonaise and toss to mix.
- Add ham and gherkins.
- Sprinkle with chives.
