Potato Salad

Ingredients
- 5 lbs peeled cut potatoes
- 1⁄4 cup white vinegar
- 1 tablespoon mustard
- 1⁄4 cup brown sugar
- 2 hard-boiled eggs, diced
- 1⁄4 cup onion, minced
- 1⁄4 cup pickle relish, sweet & dill
- 1⁄2 cup celery
- 1⁄2 cup carrot
- 1⁄2 cup Miracle Whip
Directions
- peel, cut, boil potatoes to a semi-mush.
- rinse and put in bowl.
- separately mix vinegar, mustard, brown sugar and bring to a boil until sugar melts.
- pour this mix over potatoes.
- combine eggs, onion, relish, celery, carrots, miracle whip.
- fridge overnight.
