Directions

  1. Place potatoes in a saucepan and cover with water; bring to a boil.
  2. Cover and cook for 20-25 minut3es or until very tender.
  3. Drain well.
  4. Mash potatoes with cream, 2 tablespoons butter, salt and pepper.
  5. Spread 1-1/2 cups of mashed potatoes into a greased shallow 1-1/2 quart baking dish.
  6. In a skillet, sauté onion and garlic in remaining butter until tender.
  7. Stir in flour until blended.
  8. Gradually stir in broth, mustard, thyme, and 2 tablespoons parsley.
  9. Bring to a boil; cook and stir for 2 minutes or until thickened.
  10. Stir in pork; heat through.
  11. Pour over the potato crust.
  12. Pipe of spoon remaining mashed potatoes over top.
  13. Bake, uncovered, at 375 for 35-40 minutes or until the potatoes are lightly browned.
  14. Sprinkle with remaining parsley.
