Potato Pistou

Ingredients
- 2 quarts water
- 2 cups chopped onions
- 5 tomatoes, peeled seeded and chopped
- 4 red potatoes, peeled and diced
- 3⁄4 cup halved green beans
- 2 medium zucchini, sliced
- 1⁄2 teaspoon dried marjoram
- 1 1⁄2 cups packed basil leaves
- 5 garlic cloves, halved
- 1⁄4 cup grated parmesan cheese
- salt and pepper
Directions
- Combine water, vegetables and marjoram in slow cooker; cover and cook on high for 3-4 hours.
- Process soup in food processor or blender until smooth. Add basil, garlic and cheese, processing until smooth.
- Return to slow cooker. Cook on high for 15 minutes. Season to taste with salt and pepper.
