Potato Lasagna

Ingredients
- 4 cups mashed potatoes
- 1 (12 ounce) package no-boil lasagna noodles (10 to 12 noodles)
- 1 large onion, chopped
- 2 cups cheddar cheese, shredded
- 2 cups ricotta cheese
- 1 teaspoon salt
- 1 teaspoon black pepper
- 8 -10 tablespoons butter, melted
- 2 eggs, beaten
- 1⁄4 cup sour cream
Directions
- Combine and mix all ingredients but the lasagna noodles in a large bowl.
- Layer the mixture with the lasagna noodles in a 9" x 13" pan, alternating noodles and about 1 1/2-2 cups potato mixture, till the mixture is all used up.
- Bake at 350° for about 30-45 minutes.
