Potato Chip Fish

When cornflakes just don't work anymore. Use low-salt potato chips.

Serves: 6-8

Ingredients

  • 12 cup  Italian salad dressing
  • 1 12 lbs  fish fillets
  • 3  cups  potato chips
  • 1  cup  shredded cheddar cheese (may use low fat)

Directions

  1. Preheat oven to 400 degrees.
  2. Pour salad dressing in a bowl, then dip each fillet into the dressing, coating both sides.
  3. Arrange in a single layer on a greased cookie sheet.
  4. Crush the potato chips in a large zip-top plastic bag using a rolling pin.
  5. Sprinkle the chips evenly over the fish.
  6. Top with shredded cheese.
  7. Bake at 400 degrees for about 20 minutes, until fish flakes when you test it with a fork.
