  1. Peel and quarter potato; boil until tender.
  2. Drain and place in a medium size mixing bowl; Mash with a fork until smooth and creamy.
  3. Stir in powdered sugar, one cup at a time, until a firm dough is formed.
  4. Turn dough onto surface dusted with powdered sugar; roll to a 1/4 inches thick rectangle.
  5. Spread peanut butter evenly over surface; roll lengthwise into a log.
  6. Slice into 3/4 inches pieces.
