Potato Candy

Ingredients
- 1 medium sized potato
- 1 (20 ounce) bag powdered sugar
- 2 cups peanut butter
Directions
- First, poke several holes in the potato and place in the microwave for about ten minutes or until soft (like a baked potato).
- Let cool a little so you can touch it, then remove the skin.
- Mash the potato until smooth and no chunks are left.
- Slowly pour in powdered sugar and mix with potato.
- There is really no measuring, but it usually takes the entire bag if it is not a small potato; the goal is to get it to the consistency of pizza dough.
- After mixing the bag of powdered sugar with the potato, roll the "dough" out on wax paper with a rolling pin until it is about 1/4" thick.
- Smear peanut butter over the top of the "dough" evenly.
- Roll the entire dough up (like a newspaper) to create layers of dough and peanut butter.
- Cut into desired sections and enjoy!
