Potato Candy

Both of my grandmothers and my mother always made this at Christmas. It's a must have here at our house.

• Ready In: 15 mins
• Yields: 3 dozen

Ingredients

• 1  medium potato, boiled and mashed (no salt)
• 2  tablespoons butter
• 1⁄4 lb sweetened flaked coconut
• 1  teaspoon vanilla extract
• 1  lb powdered sugar

Directions

1. Combine all ingredients in a large bowl.
2. Roll into logs and wrap in wax paper.
3. Store in refrigerator.
4. Cut in slices to serve.
