Potato Cake

Old recipe from Tilden Ne. Seems to be a spice cake. I think I would add another teaspoon baking powder, but I am writing it as written. Mia from Germany has a similar recipe so this is probably German in origin.

Ingredients

• 1⁄2 cup shortening
• 1  cup sugar
• 2  eggs
• 1⁄2 cup mashed potatoes
• 1  teaspoon baking powder
• 1 1⁄4 cups flour
• 1⁄2 teaspoon salt
• 1⁄2 teaspoon cinnamon
• 1⁄4 teaspoon clove
• 1⁄2 cup raisins
• 1⁄4 cup walnuts

Directions

1. Cream shortening and sugar.
2. Add eggs.
3. Add mashed potatoes.
4. Add baking powder, flour, salt, cinnamon, and cloves.
5. Add raisins and walnuts.
6. Bake at 350 degrees Fahrenheit for 1/2 hour.
