Yields: 4 potato bruschetta patties
Ingredients
- 2 cups Simply Potatoes® Shredded Hash Browns
- 4 tablespoons extra virgin olive oil
- 1 cup mozzarella cheese
- 1 cup spinach
- 4 tablespoons italian style sun-dried tomatoes packed in oil
Directions
- Make 4 round potato patties.
- Flatten and grill hash browns in olive oil in pan over med. high heat until golden brown on both sides. (about 8 minutes each side).
- Top each patty with cheese.
- Saute spinach and tomato about 15 seconds.
- Top each patty with tomato and spinach.
- enjoy.
