Potato and Ham Soup

Ingredients
- 3 tablespoons butter
- 1 onion, chopped
- 1 teaspoon salt
- 3 tablespoons flour
- 5 cups chicken stock
- 1 1⁄2 lbs yukon gold potatoes, peeled and diced
- 12 ounces ham, cut in small dice
- 1⁄2 cup whipping cream
- 1⁄2 teaspoon black pepper
- 1⁄4 cup chopped fresh chives
Directions
- In a large pot, melt butter. Add onion and salt; sauté until onion is softened. Sprinkle with flour and sauté for 2 minutes.
- Gradually whisk in stock. Add potatoes and ham; bring to a boil, stirring often. Cover and reduce heat. Simmer until potatoes are tender. Stir in cream and pepper.
- Serve garnished with chives.
