Potato and Chive Bake

Ingredients
- 1 1⁄2 kg potatoes, peeled, quartered
- 300 ml cream
- 1 cup cheese, grated
- 1⁄2 cup parmesan cheese, grated
- 2 tablespoons chives, snipped
- 1 teaspoon Dijon mustard
Directions
- Preheat oven to 200°C or 180°C fan. Place potatoes in a large baking dish.
- Combine remaining ingredients. Pour over potatoes and toss to combine. Cover with foil and bake for 45 minutes. Remove foil and bake for another 15 minutes, until potatoes and tender and golden.
