Pot Roast Italienne

Serves: 6

Ingredients

  • 5 -7  lbs rump roast
  • 2  tablespoons  lard
  • 2  teaspoons salt
  • 18 teaspoon pepper
  • 1  teaspoon oregano
  • 2  tablespoons onions, chopped
  • 14 cup water
  • 6  carrots, cut julienne style
  • 1 (9 ounce) package  frozen Italian cut green beans
  • 14 cup flour

Directions

  1. Brown meat in lard.
  2. Pour off drippings.
  3. Combine salt, pepper and oregano.
  4. Combine with meat.
  5. Add onion and carrots.
  6. Mix flour and water.
  7. Add water mixture.
  8. Cover tightly and cook slowly 2 1/2 hours.
  9. Add green beans.
  10. Cook 15 minutes or until meat is tender and vegetables are done.
  11. Remove meat and vegetables to a heated serving platter.
