Pot Luck Pasta Salad

Yields: 1 cup per serving
Ingredients
- 4 ounces whole wheat pasta, corkscrew shape
- 2 1⁄2 black olives, sliced
- 1 green pepper, medium, chopped (about 1 cup)
- 1 red bell pepper, medium, chopped (about 1 cup)
- 3⁄4 grape tomatoes, halved (about 10 tomatoes)
- 1 summer squash, halved lengthwise and sliced (about 1/2 cup)
- 1 zucchini, halved lengthwise and sliced (about 1/2 cup)
- 1 cup peas, thawed
Dressing
- 1⁄4 cup olive oil
- 1⁄4 cup fresh lemon juice
- 1 teaspoon oregano
- 1 tablespoon honey dijon mustard or 1 tablespoon Dijon mustard
- 1⁄2 teaspoon salt
- 1⁄4 teaspoon pepper
- 2 garlic cloves
Directions
- Cook pasta according to package directions.
- Combine all ingredients through peas.
- Dressing: Mix together oil, lemon juice, oregano, mustard, salt, pepper and garlic.
- Toss salad with dressing.
- Chill 2 hours.
