Portobello Mushroom Burgers

Ingredients
- 1 medium carrot
- 4 slices reduced-fat provolone cheese
- 8 garlic cloves
- 1 tablespoon mayonnaise
- 4 lettuce leaves
- 3 cups portabella mushrooms
- 1 tablespoon olive oil
- 1 medium onion
- 4 kaiser rolls
- 1⁄8 teaspoon black pepper
- 4 slices tomatoes
Directions
- Heat 1 tablespoon of the olive oil in a large nonstick skillet over medium-high heat.
- Add the onion and garlic; cook, stirring constantly, until aromatic and tender, about 2 minutes.
- Add the mushrooms and carrot; continue to cook until they are tender, about 4 more minutes.
- Layer the bottom half of a bun with lettuce, a burger, and a tomato slice. Top with the upper half of the bun and serve hot.
- Toast bread in oven or on panini grill until lightly browned.
- Spread them with your choice of mayonnaise, cheese, or mustard.
