Port and Paprika Chicken Bites

Ingredients
MARINADE
- 2 garlic cloves
- 1 bay leaf
- 4 tablespoons port wine
- 1 tablespoon olive oil
- 1 tablespoon cider vinegar
- 2 teaspoons paprika
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 lb chicken thigh, boneless, cubed in 1 inch pieces
TO COOK
- 1⁄2 cup parsley, chopped, garnish
- 1 tablespoon olive oil
- 1⁄2 cup onion, minced
Directions
- Combine garlic, bay leaf, port wine, olive oil, cider vinegar, paprika, salt and paper in a plastic bag.
- Add chicken; marinate chicken overnight.
- Sprinkle parsley on a plate.
- Heat 1 Tablespoon olive oil.
- Add chicken that has been taken out of the marinade.
- Add onion; cook until brown on edges.
- Place on top of parsley.
- Can serve with rice.
