Pork With Blue Cheese

Ingredients
- 12 ounces boneless pork steaks, cut into 1/2 in cubes
- seasoned flour, for coating
- 1 ounce butter or 1 teaspoon vegetable oil
- 1 tablespoon white wine vinegar
- 5 tablespoons red wine
- 3 ounces blue cheese, crumbled
- cayenne pepper, for dusting
- salt and pepper
Directions
- Toss the pork thoroughly in the seasoned flour.
- Heat the butter or oil in a frying pan and gently fry the pork until it is lightly browned and cooked through.
- Remove from the pan with a slotted spoon and keep warm.
- Drain the fat from the pan and pour in the wine vinegar and wine.
- Stir, scraping in all the meat residues, and bring to the boil.
- Reduce the heat to very low and let it very slowly simmer, covered for 30 minutes After this time, still on a low heat, stir in the cheese until it has melted.
- Taste and add a little salt, if required.
- Spoon the sauce over the pork and dust with a little cayenne pepper, then serve.
