Pork Tenderloin W/ Mushroom Sauce

Adapted from a Publix recipe I saw.

Serves: 8

Ingredients

  • 2  lbs  pork tenderloin
  • 14 cup  reduced-fat mayonnaise
  • 1 (1 ounce) packet  onion soup mix
  • 2  teaspoons garlic, minced
  • 8  ounces portabella mushrooms, sliced
  • 1  tablespoon flour
  • 12 cup skim milk

Directions

  1. In a large bowl, combine mayo, soup mix, and garlic.
  2. Slice tenderloins diagonally into 1/2 inch slices.
  3. Place pork slice and mushroom slices into a bowl with the soup mixture and stir.
  4. Pour into a large saute pan over medium high heat. Cook 2-3 minutes per side until browned to your preference.
  5. Stir in flour and cook 1-2 minutes.
  6. Stir in milk and lower heat and cook 4-6 minutes on low until the sauce thickens.
  7. Serve.
