Pork Tenderloin Medallions

A nice meat entree for special occasions.

Directions

  1. Season whole pork tenderloins with salt, pepper and garlic powder.
  2. Roast in shallow baking dish at 350 degrees, uncovered for 35 to 40 minutes.
  3. Cut butter into slices and place over meat.
  4. Spread jelly over meat evenly.
  5. Cover dish with foil.
  6. Roast additional 30 minutes.
  7. Baste and turn meat.
  8. Roast additional 30 minutes, uncovered.
  9. Remove meat to heated platter.
  10. Add sour crem to gravy, whisking it immediately, stirring well and reheat then slowly.
  11. Thicken with corn starch if necessary.
  12. Slice meat into medallions on a diagonal.
  13. Cover with thickened gravy.
  14. Can be served with twice baked potatoes and asparagus with hollandaise sauce.
