Pork- Spinach Pasta Toss

Serves: 4

Ingredients

  • 12 lb spaghetti, whole wheat
  • 14 cup  vinaigrette dressing, balsamic
  • 1  lb pork, tenderloin, cut into bite sized pieces
  • 1  cup onion, red, chopped
  • 3  tablespoons garlic, minced
  • 1 12 cups tomatoes, cherry, halved
  • 13 cup chicken broth, low sodium
  • 10  ounces spinach, leaves
  • 1  cup cheese, Italian blend

Directions

  1. Boil pasta.
  2. Heat 2 Tbs of vinaigrette, add pork and brown.
  3. Add broth and remaining vinaigrette.
  4. Add onions, cook until glossy.
  5. Add spinach, cover to wilt.
  6. Add tomatoes, cook until warmed.
  7. Drain and toss in pasta, add 1/2 cup cheese and mix lightly.
  8. Plate adding remaining cheese and serve.
