Pork Chops Ardennaise

Ingredients

  • 12  slices bacon, thick-sliced, cut into small squares
  • 6  ounces white wine
  • 3  green onions, finely chopped
  • 4  pork loin chops
  •  salt and pepper, to taste
  • 2  tablespoons flour
  • 2  ounces butter
  • 12 cup  whipping cream
  • 1  teaspoon Dijon mustard
  • 1  tablespoon parsley, chopped

Directions

  1. Place bacon in a bowl and cover with wine and onions.
  2. Let stand for 30 minutes.
  3. Drain and reserve wine.
  4. Lightly season pork chops and dredge in flour.
  5. Heat butter and fry chops over moderate heat for 6 to 7 minutes per side.
  6. Add bacon and onions.
  7. Continue cooking for 2 to 3 minutes.
  8. Add the cream and the reserved wine and simmer for 10 to 12
  9. minutes.
  10. Remove chops to a warm serving platter.
  11. Slightly reduce the sauce, add mustard and parsley.
  12. Adjust seasonings and spoon sauce over chops.
