Pork Artichoke and White Bean Stew

Ingredients
- 1 1⁄2 lbs boneless pork loin, cubed
- 1 (14 ounce) can diced tomatoes
- 1 (15 ounce) can navy beans, drained and rinsed
- 2⁄3 cup chicken broth
- 2 garlic cloves, minced
- 1 teaspoon dried rosemary
- 1 teaspoon orange zest
- 1 (14 ounce) can artichoke hearts, rinsed drained and quartered
- 1 tablespoon cornstarch
- 2 tablespoons cold water
- salt and pepper
Directions
- Combine all ingredients except artichokes, cornstarch, water, salt and pepper in slow cooker; cover and cook on low for 6-8 hours, adding artichoke hearts during the last 30 minutes.
- Turn heat to high and cook 10 minutes; stir in combined cornstarch and water, stirring 2-3 minutes.
- Season to taste with salt and pepper.
