Pork and Sweet Potato Slow-Cooker Stew Aust Ww 3.5

Ingredients
- 1 sweet potato (500gms cut into 2cm cubes)
- 500 g lean pork chops, deboned, cut into 4cm cubes
- 400 g canned tomatoes, chopped
- 1 garlic clove, crushed
- 1⁄2 glass unsweetened orange juice (125ml)
- 2 individual shallots, chopped (green parts only)
- 1 teaspoon cumin seed
- 1 1⁄2 tablespoons fresh lime juice
- 2 tablespoons fresh coriander, chopped
Directions
- Place the sweet potato, pork, tomatoes, garlic, orange juice, shallots and cumin in the base of a 5-litre capacity slow cooker. Season well with salt and pepper. Cover and cook on low setting for 7 hours.
- Stir in the lime juice and coriander and cook for a further 5 minutes. Taste to season and serve with steamed beans or broccoli.
