Porcupines

This is a recipe from one of my mother's old cookbooks called Our Favorite Casseroles from the 1970's ...it's very similar to a Lebanese dish I once had that wrapped the meatballs in a cabbage leaf. I usually use a can of diced tomatoes for the recipe instead of cutting them myself, which makes this simple recipe even simpler. Show more

Serves: 4

Ingredients

  • 14 cup rice (uncooked)
  • 1  lb  ground round
  • 1  teaspoon onion (minced)
  • 12 teaspoon salt
  • 1 12 cups tomatoes
  • 12 tablespoon cinnamon

Directions

  1. Mix all ingredients except tomatoes.
  2. Shape into balls.
  3. Place in a casserole dish.
  4. Pour tomatoes over the porcupines.
  5. Bake for one hour at 350.
