Porcupine Meatballs

My grandfather made the most amazing meatballs. This is one of his recipes. Add any other spices you like, such as oregano, before shaping into balls. Show more

  1. Combine egg and 1/4 cup of the soup.
  2. Stir in the uncooked rice, parsley, and salt and pepper to taste.
  3. Add beef and mix well with either a spoon or your hands.
  4. Shape into 1 to 1 1/2-inch balls. Place in a 10" skillet.
  5. Mix remaining soup with Worcestershire sauce and water. Pour over meatballs.
  6. Bring to a boil, then reduce heat to simmer.
  7. Cover, and simmer for 35-40 minutes, stirring often.
