Porcupine Meatballs

Ingredients
- 1 (10 ounce) can tomato soup, undiluted
- 1 lb ground beef
- 1⁄4 cup uncooked rice
- 1 egg, slightly beaten
- 1⁄2 cup minced onion
- 1 teaspoon salt
- 1 small garlic clove, minced
- 2 tablespoons butter
- 1 cup water
Directions
- Mix 1/4 cup soup with the beef, rice, egg, onion, garlic, and salt. Shape into 1 1/2 inch balls.
- Brown meatballs in butter in skillet; blend in remaining soup and water. Cover, simmer 40 minutes or until rice is tender; stir often.
