Porcupine Meatballs

Ingredients

  • 1 (10 ounce) can  tomato soup, undiluted
  • 1  lb ground beef
  • 14 cup  uncooked rice
  • 1  egg, slightly beaten
  • 12 cup  minced onion
  • 1  teaspoon salt
  • 1  small garlic clove, minced
  • 2  tablespoons butter
  • 1  cup water

Directions

  1. Mix 1/4 cup soup with the beef, rice, egg, onion, garlic, and salt. Shape into 1 1/2 inch balls.
  2. Brown meatballs in butter in skillet; blend in remaining soup and water. Cover, simmer 40 minutes or until rice is tender; stir often.
