Popovers

  1. Mix flour and salt together in a medium bowl.
  2. Make a well in the center of flour mixture.
  3. Beat eggs slightly and add in 1/2 cup milk.
  4. Gradually work this into the flour, whisking until it's smooth.
  5. Whisk in the remaining milk.
  6. (At this point if you'd like a cheese popover, add 1/2 cup freshly shredded Parmesan and a dash of cayenne.) Cover bowl with plastic wrap and refrigerate for 30 minutes.
  7. Heat oven to 450 degrees.
  8. Preheat popover pan for 10 minutes.
  9. When hot, brush popover cups with softened butter.
  10. Fill cups 2/3 full.
  11. Bake at 450 degrees for 15 minutes.
  12. Reduce heat to 350 degrees and bake for 10-15 minutes longer.
  13. Note: Do not open oven door until popovers are done.
  14. The cool air will drop the temperature quickly and they'll collapse.
