Popeye's Savory Spinach Salad

Found this recipe on the back of a spinach bag and loved it! I combined only the spinach and dressing first, plated it and added the rest of the salad ingredients. Recipe said to add salt and pepper to taste. I did nor add any.

Ingredients

• 10  ounces  tender spinach
• 1  hard-boiled egg, chopped
• 1⁄4 cup red onion, thinly sliced
• 1⁄3 cup blue cheese, crumbles
• 1⁄2 avocado, chopped
• 1  cup  fresh fruit (pears, strawberries, grapes)

• Dressing

• 1⁄3 cup olive oil
• 3  tablespoons  balsamic vinegar
• 1⁄2 teaspoon  crushed garlic
• 2  teaspoons Dijon mustard

2. Dressing: combine dressing ingredients and whisk until blended; refigerate minimum 1hour. Salad: Combine spinach, egg, red onion , blue cheese, fresh fruit, avocado and dressing in a bowl and toss.
