Polenta and Mixed Mushrooms

  1. Cook polenta according to instructions on pack.
  2. Brush clean and slice up mushrooms.
  3. Melt1 tblsp butter and the oil together.
  4. Add chopped garlic, fry till aromatic.
  5. Add mushrooms, cook, stirring till soft and browned.
  6. Turn off heat, add chopped parsley leaves.
  7. Add squeeze lemon juice.
  8. Stir remaining butter through cooked polenta.
  9. Stir cheese through polenta and spoon onto 4 plates.
  10. Top with mushies.
