Poblano Enchiladas

Ingredients
- 12 corn tortillas
- 1 lb shrimp
- 1 lb lump crab
- 6 cups mexican cheese
- 2 poblano peppers
- 3 cups sour cream
- 1⁄2 cup cilantro
- 1 tomatillo, roasted
- 2 sweet onions, chopped
Directions
- Fry tortillas in oil to soften.
- to the tortilla add:
- cheese.
- shrimp.
- crab.
- onion.
- then roll and place on baking sheet.
- bake @ 425 for 10 minute.
- for the poblano sauce:
- in a blender blend.
- poblano peppers.
- cilantro.
- sour cream
- roasted toamtilllo.
- sweet onions.
- melt butter.
- add:
- all blended ingredients.
- 2 cups cheese.
- bring to melting point.
- stir constantly.
- do not allow sauce to boil.
- serve sauce over enchiladas.
