Poached Eggs a la King

This is a really quick and simple brunch of lunch dish. Could be for dinner too I guess.

Ready In: 25 mins

Serves: 6

Ingredients

  • 12 cup  chopped onion
  • 2  tablespoons butter
  • 1  can  cream of chicken soup
  • 12 cup milk
  • 6  eggs
  • 3  English muffins, split,toasted and buttered (or use any kind of bun)

Directions

  1. Cook onion in butter till tender.
  2. Stir in soup and dash of pepper.
  3. Blend in milk and bring to a boil.
  4. Reduce heat and slip eggs into sauce.
  5. Cover and simmer until eggs are set, about 10 to 15 minutes.
  6. Place egg on muffin and top with sauce.
