Plum Nutty Conserve

Hope this is as good as Mrs. Van Z's.

Yields: 4 8oz. jars

Ingredients

  • 2 12 lbs  fresh plums
  • 1 12 teaspoons  grated  orange rind
  • 12 cup  orange juice
  • 1 34 ounces  powdered fruit pectin (1 pkg.)
  • 5 12 cups sugar
  • 12 cup walnuts, finely chopped

Directions

  1. Remove and discard pits from plums (do not peel).
  2. Chop plums into 1/2" pieces.
  3. Combine chopped plums, orange rind and orange juice in a large Dutch oven.
  4. Stir in powdered fruit pectin.
  5. Bring mixture to a rolling boil, stirring constantly.
  6. Stir in sugar.
  7. Return to a rolling boil; boil 1 minute, stirring constantly.
  8. Remove from heat; skim off foam.
  9. Stir 5 minutes.
  10. Stir in walnuts.
  11. Quickly spoon hot mixture into hot sterilized jars, leaving 1/4" headspace.
  12. Remove air bubbles; wipe jar rims.
  13. Cover at once with metal lids, and screw on bands.
  14. Process in boiling-water bath for 15 minutes.
