Plum Muffins

This recipe is the basis for the best textured muffins ever. You can replace the plums with whatever you fancy. Show more

  1. Pre-heat oven to gas 6.
  2. Line a muffin tin with 10 cases.
  3. Sift flour, baking powder and sugar.
  4. In a jug, mix melted butter, beaten eggs, vanilla and milk.
  5. Add to dry mixture to make a batter.
  6. Stone and chop the plums.
  7. Add to batter and do not over mix.
  8. Spoon into cases 3/4 fill.
  9. Sprinkle tops with the demera sugar.
  10. Bake for 25 to 30 minutes.
  11. Replace plums with choc chunks, nuts, cherries or what ever takes your fancy.
